Chocolatier · United Arab Emirates

The desert, tempered.

Fine chocolate made in the Emirates, where summer passes fifty degrees and chocolate melts at thirty-four.

Sahar, the hour before dawn, is the coolest hour of the desert day. Hence the name.

01The flavours

Six flavours from the Gulf table.

Every piece begins with something you would be offered in an Emirati home.

    تمر

    Khalas dates

Soft, dark and close to toffee. We cook them down to a caramel.

    02The craft

    Three temperatures. One snap.

    1. 45°

      Melt

Heat undoes every crystal in the cocoa butter. The chocolate forgets its shape.

    2. 27°

      Cool

Spread across cold marble, it begins to form the one crystal worth keeping: Form V.

    3. 31°

      Warm

Warmed a few degrees, the unstable crystals melt away. What remains sets with a mirror shine and breaks clean.

    03The collection

    Five pieces. Nothing hidden.

Turn each piece. Cut it open to see how it is built, from the shell to the heart.
